Healthy Fruit Cake (Vegan, No Fat, No Eggs, No Sugar)

Ingredients
225g chopped, stoned dates
275ml boiling water
450g mixed fruit
75g wholemeal flour
75g plain white flour
3 tsp baking powder
50g ground almonds
1 tsp mixed spice
4 tbsp orange juice
Flaked almonds for top
Method
- Grease and line a 900g (2lb) loaf tin with greaseproof paper or baking parchment
- Set the oven at 160C/Gas mark 3
- Put dates into a large bowl and pour the boiling water over them
- Leave to cool
- When cool, mash dates in water and add all the other ingredients except the flaked almonds
- Mix thoroughly together and place the mixture into the tin. Scatter flaked almonds over the top
- Bake for approximately 75 to 90 minutes until cake is firm to touch and a skewer comes out clean
- Leave in tin to cool before removing.
