Ingredients

225g chopped, stoned dates
275ml boiling water
450g mixed fruit
75g wholemeal flour
75g plain white flour
3 tsp baking powder
50g ground almonds
1 tsp mixed spice
4 tbsp orange juice
Flaked almonds for top

Method

  • Grease and line a 900g (2lb) loaf tin with greaseproof paper or baking parchment
  • Set the oven at 160C/Gas mark 3
  • Put dates into a large bowl and pour the boiling water over them
  • Leave to cool
  • When cool, mash dates in water and add all the other ingredients except the flaked almonds
  • Mix thoroughly together and place the mixture into the tin. Scatter flaked almonds over the top
  • Bake for approximately 75 to 90 minutes until cake is firm to touch and a skewer comes out clean
  • Leave in tin to cool before removing.
