Salmon bites

Recipe courtesy of Gillian Dick, healthyliving award assessor (serves 4)


4 skinless salmon fillets
Flour for coating
Dried breadcrumbs
250g low-fat natural yoghurt
Dried parsley
1 lemon
A little vegetable oil for greasing baking tray


  • Turn oven on to 200°C/400°F/gas mark 6.
  • Wash and finely grate lemon rind into a bowl with breadcrumbs.
  • Add a teaspoon of parsley and mix.
  • Cut salmon into strips, removing any bones.
  • Coat salmon with plain flour, then dip into yoghurt, then breadcrumbs (use two forks for less mess).
  • Place on a greased baking tray and put into heated oven for 10-15 minutes.
  • Eat at once or store when cool in fridge.

Can be served with a crisp side salad.
