New resources for serious fun

Many of our award holders tell us that the healthyliving award has been great for motivating their catering staff. Learning about healthy eating and the award criteria can spark employees’ enthusiasm, and working together towards gaining the award can give the whole catering team a fantastic sense of achievement. They can also take the healthy eating messages home to their own families.

To meet the criteria for the award, all staff must be fully aware of the award and what needs to be done to achieve it, so staff training is a vital part of the process. To help with this and make it more fun, we have recently developed a quiz for catering staff, based on the award conditions, and this is now included in the starter pack that is sent to all new applicants.

In response to requests from family eateries and establishments that serve children we have also produced a kids’ activity sheet. With word games, a food quiz and pictures to colour, it’s all based on healthy fruit and vegetables.

A flavour of…

Indian spiced couscous with fresh tomato salsa – Serves 4

Method

  1. Heat orange juice to boiling point and add all the spices.
  2. Let simmer for 15 minutes then pour over couscous.
  3. Add the garlic and lemon juice, then cover with cling film for 5 -10 minutes until liquid is absorbed.
  4. Ball into small patties (about 20g; three per person) and gently brown in a non-stick pan.
  5. Serve warm with the crisp mixed leaves.

Ingredients:
100g mixed rocket and red chard leaves
200g couscous
150ml orange juice
Approx 2 teaspoons curry powder
1 teaspoon ground cumin
1 teaspoon fennel seed
Small bunch fresh coriander, finely chopped
1 teaspoon crushed garlic
1 dessertspoon lemon juice

 

 

 

Add a fresh tomato salsa to accompany the dish:

Method

  1. Finely chop all ingredients and mix.
  2. Add just enough olive oil to bind all together.
  3. Add lemon juice to taste at the end.

Ingredients:
3 ripe tomatoes
100g cucumber
1/4 red onion
Small bunch fresh coriander
Minimal amount of olive oil
Lemon juice to taste
