
Guidance for caterers on cereals
If you serve breakfast cereals, unsweetened higher-fibre cereals must be available and labelled with the apple logo. You should look for the following words in the ingredients list when identifying higher-fibre cereals:
- Wholewheat
- Oats
- Barley
- Wheatbran
- Oatflakes
- Wholegrain
- Bran-enriched
In addition to checking the fibre content, you should also ensure that salt is less than 1.5 grams per 100 grams and that there is no added sugar in the ingredients list.
Some suitable product examples are: Porridge, Weetabix, Shredded Wheat and Unsweetened Muesli. Some common products that don’t meet our criteria are Special K, Branflakes, All Bran and Fruit & Fibre.
Exceptions to the above criteria are cereal snack bars. These products fall under the bought-in criteria table in section 2 of the guidance folder.
You should check the nutritional information per 100 grams from the cereal bar packet against table 1, which is for products less than 100 grams.
Due to the criteria change last year, most regular cereal bars do not meet our new criteria. Please inform the award team if you find any products that are suitable.

Glass noodle vegetable stir-fry - Serves 4

Method
- Bring a pan of water to the boil and heat a non-stick wok until hot.
- Mix all vegetables together and set aside.
- Plunge noodles into the boiling water and cook until tender (with bite); drain.
- Spray hot wok with the spray oil and add ginger, Chinese five spice red chilli and garlic.
- Now add vegetables and stir-fry for about 4-5 minutes until tender.
- Toss the soy sauce though the stir-fry and serve with glass noodles.
Ingredients:
1 red chilli, finely sliced.
2 spring onions, finely sliced.
300g pak-choi, roughly chopped.
1 green pepper, finely sliced.
200g shitake mushrooms, sliced.
2 cloves garlic, finely sliced.
1 small knob fresh ginger, finely grated.
500g glass noodles.
150g sliced bamboo shoots.
150g sliced water chestnuts.
1teasp Chinese five spice.
2 teasps low-salt soy sauce.
Sunflower oil spray (to spray your wok before stir-frying).
