stand at ScotFest

A key factor in the success of the healthyliving award is letting people know about it - both caterers and the general public. One way we do this is by exhibiting at various events around the country.

Maurice and Barbara, the healthyliving award development team, recently attended ScotFest 2010 held in a beautiful setting in Alva at the foot of the Ochil Hills.

ScotFest was part of Scottish Food Fortnight, and we were able to chat to people enjoying the wide variety of produce on offer, to tell them about the award and encourage them to look out for it.

People visiting the stand were able to pick up leaflets and recipe booklets, and we also gave away hundreds of green apples which were enjoyed by young and old alike.

We also attend exhibitions and events aimed at the food service sector, where we can meet with a wide range of caterers, tell them all about the healthyliving award and explain why they should go for it.

Look out for us at ScotHot, the major hospitality and catering exhibition, at the SECC in Glasgow early next year.

Herb crusted salmon fillet - Serves 4

Method

  1. Mix the chopped herbs, pepper and oil into the breadcrumbs.
  2. Zest the lemon and add to the mixture.  Use the juice to moisten the top of the salmon so the crumbs will stick.  Put the rest of the lemon juice through the mixture and use to top the salmon fillets.
  3. Bake at 180°C for about 12-15 minutes, or until cooked through.
  4. Serve with new potatoes and a mixed leaf salad.

Ingredients:
480g of fresh salmon fillet, skinned
1 lemon
25g fresh parsley
25g fresh coriander
25g fresh dill
100g fresh wholemeal breadcrumbs
50ml olive oil
Cracked black pepper
